More about the beer
Witbier means “white beer”. It’s named for its pale, cloudy look, which comes from unmalted wheat and oats left unfiltered. It comes from Belgium, around the village of Hoegaarden, and nearly went extinct: the last traditional wit brewery closed in 1957. A milkman called Pierre Celis brought it back in the 1960s, and the style hasn’t looked back. Orange peel and coriander go in the boil, and the yeast adds banana and clove, so it drinks bright, zesty and soft.

More about the bird
The Northern gannet is the biggest seabird in the North Atlantic, with a wingspan of up to 1.8m. It hits the water like a dart, folding its wings back at the last second. It has no external nostrils, and air sacs in its face and chest cushion each dive, which is basically a built-in airbag. The UK is home to more than half the world’s gannets. Look out to sea from Baggy Point or Morte Point in late summer and autumn and you’ll often catch them plunge-diving offshore.

But Why Early Bird?
Early bird catches the worm or early bird catches the waves.
